Randi's Rollos

Rollo Cookies
1 package german chocolate cake
2 eggs
1/3 cup vegetable oil
Bag of Rollos
Powdered Sugar
Mix together cake mix, eggs, & oil. Unwrap Rollos. Make a small ball of mix and flatten in palm of hand. Place Rollo in center of flattened mix and wrap around until Rollo is in the middle. Roll ball in powdered sugar and place on ungreased baking sheet. Bake at 375 degrees for 8-11 minutes.
I feel really lucky to have this recipe and even more lucky to share it with you. Randi has consented to let me share this winner of a cookie. She just doesn't give out any ol' recipe. This is her go to - "take to the Ward party, Relief Society function, and Sunday school class treat"- recipe. She loves that it's a different kind of cookie and I'm not gonna lie - it's fantastic. Be prepared to eat the whole batch and then have to make a couple more.

Kim's Crockpot Meatballs

Crockpot Meatballs
1 package Frozen Meatballs
1/2 jar grape jelly (sugar-free is a great option!)
1/2 jar chili sauce
1/2 cup salsa
Instant Rice
Place frozen meatballs in bottom of crockpot. Dump in jelly & hot sauce and cook on low for 2 hours.
10 minutes before you are ready to eat add 1/2 cup salsa. Serve over rice.
Kim was one of my awesome visiting teachers when we lived up in Tooele County. She was always so good to help me out when I was pregnant and bedridden with pre-eclamsia, gestational diabetes (twice!), & pre-term labor(twice!). She brought us this meal when we needed it most. Best thing - she was consious of the 'betes and I was able to count my carbs well with this meal!

Puffed Paint

Puffed Paint
1 tablespoon self-rising flour
1 tablespoon salt
4 teaspoons water
food coloring
Mix flour, salt, & water until smooth. Add food coloring to desired color. Paint on construction paper. (If paper is too thin, the paint will soak through & not puff up!) The thicker the paint is on the paper the more it will puff up.
While paint is still wet, lay flat in microwave & cook for 10 seconds or until paint is dry.
This was really fun to do with CJ. He fingerpainted the paint onto construction paper and loved the end result!

Ranch 'tatoes

Roasted Ranch Pototoes
2 lbs small red potoatoes (quartered)
1 packet Hidden Valley Ranch Dressing mix
1/4 cup vegetable oil
Place potatoes in a plastic ziplock bag and add oil. Toss to coat. (That is one of CJ's favoriate things to do...) Add dressing mix & toss to coat again.
Place on baking sheet that has been sprayed with Pam cooking spray & bake at 475 for 30 minutes. Turn potatoes half way through cooking.

Mike's Honey Mustard Chicken

Honey Mustard Chicken
With Heaven Creamy sauce
2-4 Chicken Breast
2 tablespoons vegetable oil
3 tablespoons Dijon mustard
2 tablespoons honey
1 pint heavy cream
pepper
Brown chicken in vegetable oil. Remove from pan. Mix drippings from the pan, honey, & 2 tablespoons of mustard in seperate bowl. Spread over chicken & cover with tin foil. In the pan, whisk cream & remaining tablespoon of mustard together. Add pepper to taste. Heat until bubbling, whicking occasionally. Spoon over chicken.
First time I had this, Mike (my awesome brother-in-law) made this for our family. He should be on Food Network as a chef. He would be an entertaining tv personalilty. Oh, and did I mention he is an awesome cook? I really was skeptical of the dish because I'm not a fan of mustard of any kind. Well, I certainly ate my words "I never eat mustard" and well, really enjoyed it. So much so that I make this meal at least once a week. I like to serve it with Ranch Potatoes. I was introduced to this scrumpidilyumptious side dish by my equally awesome sister-in-law who in fact is married to Mike. I will be blogging that recipe shortly!

Sweet Puffy Corn Snack

Puffy Corn
1 bag puffed corn
1 1/3 cup sugar
1/2 cup karo syrup
1 teaspoon vanilla
2 stick butter
1 small package almonds
Bring sugar, syrup, & butter to boil. Cook to soft ball stage. Add vanilla. Pour over puffed corn in large bowl. Add almonds. Stir/toss until coated.
*Warning* May become addicting and one batch will NOT be enough!

Creamy Italian Chicken Crockpot cooking :)

Creamy Italian Crockpot Chicken
2-4 Chicken Breast
1 block cream cheese (cubed)
1 can mushrooms (optional)
1can cream of mushroom soup
1 package italian dressing
Instant Rice
With the crockpot on low, put chicken on the bottom. Mix 1/4 cup water with italian dressing Pour over chicken & cook for 3 hours.
After 3 hours, dump cream cheese, soup & mushrooms into crockpot & cook on high for 1 hour. Stir together and voila! delicious meal. Serve over cooked rice.
*Variation*
With crockpot on high, put chicken on the bottom. Mix 1/4 cup water with italian dressing. Pour over chicken. Dump cream cheese, soup & mushrooms in the crockpot & cook for 3 hours. Serve over cooked rice
I do the variation of this recipe on Sundays before we go to church. Super easy!
