Texas Roadhouse Rolls - Copycat Recipe
adapted from:

(Printable Recipe)


4 tsp. active dry yeast
1/2 c. warm water
2 c. milk, scalded and cooled to lukewarm
3 Tbl. of melted butter, slightly cooled
1/2 c. sugar
2 quarts all purpose flour (7-8 cups)
2 whole eggs
2 tsp. salt


Dissolve yeast in warm water with a teaspoon of sugar. Add yeast, milk, sugar and enough flour to make a medium batter. Beat thoroughly. Let stand until light and foamy. Add melted butter, eggs and salt. Beat well.


Add enough flour to form a soft dough. Sprinkle a small amount of flour onto counter and let dough rest. Meanwhile, grease a large bowl. Knead dough until smooth and satiny (or put in your kitchen-aid, use the dough hook and knead for about five minutes.)and put in greased bowl; turn over to grease top.Cover and let rise in a warm place until double in bulk. Punch down. Turn out onto a floured board. Divide into portions for shaping; let rest 10 minutes. Shape dough into desired forms. Place on greased baking sheets. Let rise until doubled.


Bake at 350 degrees for 10-15 minutes or until golden brown. Baste immediately with butter. Yield: 5 to 6 dozen.

1/2 cup sweet creamy butter (softened, salted)
1/3 cup confectioners' sugar
1 teaspoon ground cinnamon


Directions:
In a small bowl, with a handmixer, beat butter till fluffy.
Add confectioner's sugar at a time, blending well.
Add cinnamon to mixture and blend well.

Brazilian Lemonade

Brazilian Lemonade



4 juicy limes

1 cup sugar

6 cups cold water

6 Tablespoon sweetened condensed milk


Cut limes into 8ths and throw them in the blender (skin and all) with cold water and sugar (that has been dissolved in water). Pulse five times. Strain into pitcher you are going to use. Add sweetened condensed milk and serve over lots of ice.

Country White Bread

1 cup water, plus

1 tablespoon water (70-80 F)

1 large egg

4 1/2 teaspoons vegetable oil

3 1/4 cups bread flour (I used all purpose flour and it worked fine)

1/4 cup sugar

1 1/2 teaspoons salt

1 packet instant yeast

In bread machine pan, put all ingredients in order listed. Select dough setting. Check dough after 5 minutes of mixing, if needed add 1-2 tablespoons of water or flour. When dough setting is done (my bread machine 1 1/2 hours later), punch down dough and place on floured surface. Shape into loaf and place in greased bread pan. Let rise 45 min. Bake in oven 350 for 25-30 min.


**I adapted this recipe to bake in oven. I don't like the shape of bread in the bread machine. So if desired put all ingredients in bread machine pan in order listed. Select basic bread setting. Check dough after 5 minutes of mixing, if needed add 1-2 tablespoons of water or flour depending on consistency (I found my dough was just fine). Bake as normal.

Chocolate Revel Bars

This recipe is halved to fit an 8-inch square pan. Double it if you want to use a 9x13 or 10x15-inch pan.

100g (1 stick minus 1 tablespoon) butter
200g (1 cup) packed brown sugar
1/2 teaspoon baking soda
1 large egg
1 teaspoon vanilla
155g (1-1/4 cups) all-purpose flour, sifted
122g (1-1/2 cups) quick-cooking rolled oats



Preheat the oven to 175°C (350°F). Line an 8-inch square pan with parchment paper cut to fit. Cream the butter until soft, then add the brown sugar and baking soda and cream until light and fluffy, scraping down the sides of the bowl occasionally. Add the egg and vanilla and beat until just combined. Using a strong wooden spoon, stir in the flour and rolled oats until just combined. Press two-thirds of the dough mixture in the bottom of the prepared pan.


Filling
12g (1 tablespoon) butter
200g (10-1/2 tablespoons or 7 ounces) sweetened condensed milk
125g (3/4 cup) semisweet chocolate chips

1 teaspoon vanilla


Combine the butter, condensed milk, and chocolate chips in a small heavy-bottomed saucepan or microwaveable bowl and place over low heat (or microwave on LOW power), stirring occasionally, until the chocolate has melted. Stir to combine and stir in the vanilla. Spread over the dough in the pan using an offset spatula and dot the surface with the remaining one-third of the dough (it's quite stiff, so use two spoons) irregularly in patches.Bake for 18-23 minutes or until the top is light brown (the filling will not be set at this point). Cool completely then cut into squares.

Cinnamon Rolls
1 cup of warm milk
1 egg, beaten
1/4 cup of butter, melted
3 tbsp warm water
1 tsp vanilla
3 1/3 cups of flour
3/4 tsp salt
3 tbsp white sugar
2 tsp yeast


Combine the milk, egg, butter, water, and vanilla together and pour into your bread machine pan.
Mix the flour, salt and sugar together then pour on top of the milk mixture. Make a small bowl on top of the flour mixture and pour the yeast into it. Turn your bread machine on to the dough cycle, close the lid and leave alone until your machine beeps at you - mine takes 1 1/2 hours.
Once the dough is done, put it on a floured surface and roll out into a large rectangular shape (about 1/4 inch thick) using a rolling pin. Make sure you have enough flour on the counter so the dough doesn't stick when you roll it out.



Filling:
1 cup of brown sugar
4 tsp cinnamon
3 tbsp butter, softened



Combine the sugar and cinnamon and mix thoroughly. Spread the softened butter all over the entire surface of the rectangular shaped dough. Next sprinkle the filling over the dough.
Carefully roll up the dough as tightly as you can. If it sticks to the counter, slowly ease the dough up with your fingers - be careful not to tear the dough.
Use a piece of thread to cut the dough. Carefully slide the thread under the dough then cross the thread so it cuts the dough into 1 inch thick pieces.
Place the cut cinnamon rolls into a glass baking dish that is thoroughly coated with butter.
Cover the rolls with a dish towel and set in a warm place for 30 minutes, or until doubled in size.
Preheat the oven to 350 degrees. Cook the cinnamon rolls in the oven for 15-20 minutes or until light brown on top - don't overcook.



Glaze:
3/4 cup of powdered sugar
1/2 tsp vanilla
3-4 tsp milk



Combine the ingredients together and mix thoroughly making sure to remove any lumps.
Once the cinnamon rolls are finished baking, remove from the oven and drizzle with the glaze. Serve immediately. Enjoy.

Strawberry Crepes
4 eggs
1 1/3 cup non fat milk
1 tbsp melted butter
1/2 tsp vanilla extract
1 cup all purpose flour
1 tbsp white sugar
1/2 tsp salt


Additional ingredients:
7-8 Strawberries, stems removed and diced
1 tbsp sugar, more depending on the sweetness of the berries
Powdered sugar, sifted


Combine the first seven ingredients in a large bowl; use immersion blender (or whisk) to mix crepe batter thoroughly. Make sure there are no lumps in the batter. Heat a small non stick skillet over medium heat. Spray with cooking spray and using a small ladle, spoon about 3-4 tablespoons of crepe batter into the hot pan. Tilt the pan clockwise so that the batter spreads evenly over the bottom of the pan. Cook for 30 seconds to 1 minute per side. Most people only cook one side but I cook both.
Combine the diced strawberries and the sugar together. Taste the berries and add more sugar if needed.
Remove from pan and place on a plate. Spread a bit of the strawberries down the center of the crepe. Roll and place on another plate for serving. Sprinkle the top with sifted powdered sugar and more strawberries. Eat immediately.

Strawberry Spinach Salad with Poppy Seed Vinaigrette


Salad:
10 oz of baby spinach
2 cucumbers, diced
2-3 green onions, diced
2 cups of sweet strawberries, diced


Poppy Seed Vinaigrette:
2 tbsp olive oil
2 tbsp apple cider vinegar
1 tbsp lemon juice
1-2 tsp sugar
1/2 tbsp poppy seeds


Place the spinach in a large salad bowl then top with the diced cucumbers, green onions, and strawberries.
Combine the olive oil, apple cider vinegar, lemon juice, sugar, and poppy seeds in a small bowl and mix until well combined.
Pour the dressing on top of the salad and toss well until evenly coated. Serve immediately. Enjoy.
